Friday lunch

Marketplace-style lunch with a selection of half-sandwiches and bulk salads, house-made chips, whole fruit, cookies, and fruit-infused water. This is new for the Lynnwood Convention Center developed specially for us as an environmentally-friendly option to the traditional “box lunch.” Enjoy your onsite choice of (no need to make selections in advance):

Sandwiches

1. Fresh Mozzarella(V) with spinach, roasted peppers, tomato and pesto mayo

2. Pesto Baked Chicken with fresh Mozzarella, roasted peppers, marinated artichokes, and roasted garlic mayo

3. Rosemary Ham with Havarti, Mama Lil’s Tapenade, Romaine leaf, and grain mustard

4. Turkey with bacon, Havarti, sliced tomato, Romaine leaf, and Avocado spread

A dairy free or vegan sandwich available upon request. Please indicate your selection on the form.

Salads

1. Mediterranean Salad(GF, V, Vegan) with roasted eggplant, marinated artichokes, sun-dried tomatoes, roasted peppers, mixed greens, and marinated chickpeas.

2. Kale Salad (GF, V, Vegan) with mixed greens, cucumber & carrot.

Saturday lunch

The Baja lunch buffet featuring Chicken Breast Asado (GF), with cotija cheese and corn salsa; Southwest Shepherd’s Pie with Hominy Crust (GF); Pinto beans a la charra (GF, Vegan); Cilantro Lime Pilaf (GF, V, Vegan); Roasted Poblano, Squash & Chayote Ratatouille (GF,V); Flour tortillas (V); and a lemon Brule dessert. Also includes coffee, tea, and iced tea.
